Ingredients
2 lbs Ground Beef
1 Whole Green Pepper (Diced)
1 Whole Red Pepper (Diced)
1 Whole Onion (Diced)
2 Garlic Cloves (Minced)
1 Whole Jalapeño (Diced) (Remove Seeds for less Spice)
6 oz Tomato Paste
14.5 oz Diced Tomatoes
1 cup Beef Broth
15 oz Chili Beans
15 oz Kidney Beans
1 tbsp Chili Powder
1 tsp Cumin
2 tsp Salt
2 tsp Pepper
1 tbsp Oil
Directions
- In a frying pan, brown the ground beef over medium-high heat, breaking it up with a spoon as it cooks. Season meat with 1 tsp of salt and pepper
- Remove the cooked beef and drain. Put beef aside.
- In the large pot add oil, chopped onion, bell pepper, Jalapeño and garlic to the pot and sauté for about 5 minutes.
- Stir in the ground beef, diced tomatoes, chili powder, tomato paste, beef broth, cumin, salt and pepper. Bring the mixture to a simmer.
- Stir in the kidney and chili beans and cover
- Allow it to cook on low heat for 2 hours stirring occasionally
- Remove from heat and Serve!
